Simplified // Food Plan Progress




Recently I posted about how Cody and I were starting the 7 Day Meal Plans by Lindsay Nixon. So far it's been a very positive experience. Above is a photo of all the produce we bought the first week. We spent less then $100 for three meals a day and snacks. We were rather happy and excited about this. Plus, it's a super healthy diet! Cody lost weight after the first week and now has a 29" waist.

All the meals are super unique and full of interesting flavor combos. It's fun trying a bunch of new things. The meal plan is based on a Sunday prep day. Which means almost all the cooking is done in one day. The first week only took us about three hours. The second week I did all the prep by myself and took me over five hours. I'm slow in the kitchen and hate cooking, so it was a very frustrating day for me. When you are finished though, it's a very rewarding feeling. It makes life much easier during the rest of the week.

Everything is stacked in containers and ready to be eaten throughout the week. Another thing we are now doing is making our own vegetable broth. Last week some of the recipes called for vegetable broth. When we went to the grocery store I bought two containers of it, each priced at $3.55. I was so mad at how expensive it was. On my five hour prep day I used all my veggie scraps to make my own broth.



We now have over ten cups worth in our freezer for the cost of FREE. Why I didn't do this forever ago I don't know! I think the food plans are really going to help us in the long run. We may cut out some of the breakfasts because Cody leaves so early for work that it makes it hard to eat that early. We want coffee in the morning, that's it. haha
