Recipe: Tofu Scramble




It's been months since I posted a vegan recipe on the blog. It's going on three years since I went vegan and I still get asked all the time, "What do you eat?" Honestly the question still catches me off guard because I don't feel like my food is that confusing or complicated. One thing I always tell people is tofu scramble. I also have found that all "meat eaters" love this meal as well.



Tofu scramble is one of my favorite dishes because you can change it depending on your taste preferences. I love cooking with lots of spices! For my version of tofu scramble I put seven different seasonings in it. Here is my recipe:

Spicy Tofu Scramble
1 16oz package of extra firm tofu
1 8oz can of pinto beans, drained
2 tablespoons of nutritional yeast
1/2 teaspoon of each the following spices: cumin, cajun spice blend, paprika, cayenne, ground turmeric, garlic granulated, and curry powder
Add small pieces of greens, I use spinach
Tortillas



Drain the water from the tofu and break into pieces in the skillet. I usually cook the tofu on a medium heat and stir occasionally to make sure it doesn't stick or burn. Then you can start adding all your spices. My mixture is pretty hot, so this is where you can really experiment or leave some of the spicy stuff out.




The nutritional yeast will give it a very yellow look. Once you have mixed everything well you can add some drained beans and your chopped up greens. Sometimes there is still water in the tofu or from the beans, cook until the water is gone and everything is warm. Very simple meal to make, especially if you need something quick!




Serve in tortillas! My recipe is also very good with black beans instead of pinto and I love adding rice to the mixture as well. Tofu scramble is very flexible and you can find tons of recipes for it online. I also add Franks hot sauce to mine and it's amazing. Amazing if you like hot of course!
