Chicken Bacon Ranch Roll-Up

I am always looking for easy weeknight dinner solutions. Weeknights are crazy in our house, my husband usually picks up my son and then I get home and we make dinner and eat. If we have time after dinner we sometimes have to rush to the store to either do grocery shopping, or pick up some random thing we need. It’s very hectic, and the faster dinner takes the more time we have to go to the store or just play in the evening. I am always looking for easy recipes that use ready made products to make a great and tasty dinner. One of our favorite savory flavors is chicken, bacon, and ranch, so we always like to incorporate them into dinners. I decided to make this Chicken Bacon Ranch Roll-Up using refrigerated pizza dough to make an easy and delicious weeknight dinner option.
The Chicken Bacon Ranch Roll-Ups were so delicious and I loved how easy they were to make. My whole family loved it and my son gobbled it up. We have made this many times since the first time we made it and it has become a family favorite. I love the combination of the chicken, bacon, and ranch flavors rolled up in the pizza dough. This also tastes really good dipped in ranch dressing. I hope that you enjoy!

Ingredients

  • 1 lb. ground chicken
  • 1 teaspoon garlic powder
  • 2 tablespoons ranch dressing mix (dry)
  • 4 slices of bacon, chopped
  • 1/2 lb (8 ounces) Velveeta, cut into 1/2 inch cubes
  • 1 refrigerated pizza crust (I used Pillsbury Pizza Crust)
  • Ranch dressing (optional)

Instructions

  1. Preheat the oven to 400 degrees.
  2. Cook the ground chicken and bacon in a large skillet on medium-high heat until the ground chicken is evenly browned, stirring occasionally. While the chicken and bacon are cooking add the garlic powder. Drain and then return the meat to the skillet. Add the ranch dressing mix and the Velveeta and then cook until completely melted, stirring frequently. Remove from the heat and set aside.
  3. Unroll the pizza dough on a greased cookie sheet. Press the pizza dough into a large rectangle. Top evenly with the meat and cheese mixture. Roll up the dough, starting at one of the long sides. Put the roll, seam-side down on the cookie sheet.
  4. Bake for 20-25 minutes or until golden brown. Cut to serve and serve with ranch dressing.

Notes

We made our chicken and bacon in separate skillets, so that the bacon grease did not get into the chicken. You can either cook them separate or together depending on preference.
