Caramel Apple Cheesecake


One of my favorite things about the fall is caramel apples. Whenever we go to fall festivals, I always love to buy caramel apples and sometimes I even make my own. Since I have been on an apple baking kick, I decided to put one of my favorite things about fall, caramel apples, and combine them with one of my favorite desserts, cheesecake.
This Caramel Apple Cheesecake is perfect for fall and has great caramel and apple flavor. Plus the caramel on top is just like the caramel coating of a caramel apple. I love making cheesecakes and this one was fantastic. While cheesecakes may take awhile to bake, they really aren’t that hard to make. Once you get all the ingredients together, the long part is really just waiting for the cheesecake to cook. While cooking may take long, the nice thing is that you can do other things while it is in the oven. So don’t let the cook time scare you into not trying to make cheesecake.

This Caramel Apple Cheesecake is the perfect dessert for fall, combining the flavors of caramel, apple, and cinnamon in a delicious cheesecake. I really like the look that the melted caramel topping gives to the cheesecake as well. The caramel can be hard to eat once it hardens, so you can also just use a caramel sauce as a topping instead. We loved this cheesecake and I thought it was great for fall. I hope that you try this delicious dessert!

Caramel Apple Cheesecake

Ingredients

  • 9 Graham Crackers, crushed (I used cinnamon graham crackers)
  • 1/4 cup butter, melted
  • 3 packages (8 ounces each) cream cheese, softened
  • 3/4 cup sugar
  • 3 eggs
  • 1 tablespoon vanilla
  • 1 1/2 cups apple pie filling
  • 1/4 cup caramel ice cream topping
  • 1 1/2 teaspoons cinnamon
  • 1 bag (11 ounces) caramels, unwrapped and melted

Instructions

  1. Preheat the oven to 325 degrees.
  2. Take the crushed graham crackers and mix with the melted butter. Press the crust into the bottom of a 9 inch spring form pan lined with parchment paper or tin foil.
  3. In a large bowl, beat the cream cheese and sugar until smooth. Then beat in the eggs and the vanilla.
  4. Chop up the apples contained in the 1 1/2 cups of apple pie filling into smaller pieces. Then combine the apple pie filling and caramel ice cream topping. Gently beat in the caramel apple mixture and cinnamon to the cream cheese mixture.
  5. Pour the batter into the spring form pan on top of the crust. Bake the cheesecake for 1 hour to 1 hour 10 minutes or until a knife inserted in the center comes out clean. Remove the cheesecake from the oven and allow to completely cool.
  6. When done cooling, melt the caramels according to the directions on the package. Pour the melted caramel on top of the cheesecake. Keep the cheesecake refrigerated until ready to serve.
