We’ve spent the past month eating out while our home was packed, moved, we vacationed, celebrated my niece’s wedding & began to slowly unpack. Somehow, I’ve managed to maintain my weight, but I’m completely over eating out! While we try to settle in & live a few more days without a refrigerator, I’m finally cooking again & couldn’t be happier. It’s taking some time to determine where kitchen tools make the most sense & are easily accessible, but I’m starting to adapt. There are so many must-do projects {like fixing the faucet handle that fell off during the walk through or the bathtub that won’t plug} that I’m keeping our dinners quick & simple. I have a lot of 15 & 10 minute dinners to share with you – just in time for back to school!
I have an addiction to nachos. There’s just something I can’t resist about them, especially fresh out of the oven. Baked nachos are an easily adaptable 10 minute dinner that older kids can even construct themselves! Some of my favorite toppings include:
freshly grated cheese
beans
chicken
ground beef
tomato
corn
queso
fresh shredded cheese – shred a block for easy-to-melt, flavorful cheese
salsa {just before serving}
guacamole {just before serving}
sour cream {just before serving}
lettuce {just before serving}
It’s an easy way to please everyone in the family without a lot of effort!
