Summer Side Salad | Lemon Vinaigrette

With kids going back to school in just over a week, it’s easy to think that summer is coming to an end. I’m not letting it! As much as I enjoy Fall flavors, I’m holding out until after Labor Day! Something about summer always has me eating fresher & healthier. I even crave salad. Like pregnant, have to have it now. That’s a good thing, right? I keep side salads simple & fresh. There’s no sense using a bottled dressing that has half the flavor for a savings of just 30 seconds. That’s right, you can make this dressing in just seconds. Pour, shake & toss!

One of my tips for making vinaigrettes fast & easy is to pour the vinegar in a measuring cup first, then adding the olive oil, without pouring it out in between. You can even whisk it in the measuring cup if you want to save another dish to wash & don’t intend to keep the extras!

Ingredients
  • ¼ c white or red wine vinegar
  • ¼ c olive oil
  • 2 Tbsp lemon juice
  • fresh cracked pepper

Instructions
  1. Combine vinegar, olive oil & lemon juice.
  2. Shake well!
  3. Top with fresh cracked pepper.

I enjoy the simplicity of this salad, using just freshly shredded dry cheese to top it like pecorino, asiago or parmesan. Truly, whatever I have in the refrigerator from a previous meal {like my tortellacci}! I’m going to keep this post like the recipe – short & sweet. Have a beautiful weekend!
