Slow Cooker Chicken Tortilla Soup, top8free glutenfree


Are you looking for an easy slow cooker meal? This one is perfect for a chilly winter day for lunch or dinner. My kids love anything you can crunch tortilla chips into and I love anything I can dump in a pot for hours and not have to think about!

Ingredients
1 1/2 lbs boneless chicken, thighs or breast
1 onion, chopped
1 red pepper, chopped
1 can of corn, drained
3 cloves garlic, minced (we skip this because of a garlic allergy)
1 Tbsp chili powder
1 tsp oregano
1/2 tsp salt
1/4 fresh cilantro, chopped
1 (28 oz) can petite diced tomatoes
4-6 cups chicken stock (until chicken is completely covered)

Optional
avocado, chopped
crushed tortilla chips or sliced corn tortillas

  1. Place chicken in bottom of slow cooker.
  2. Add remaining ingredients and cook on low up to 8 hours.
  3. One hour prior to eating, remove chicken and chop it up. Add it back to the slow cooker.
  4. Spoon soup into bowl and add avocado and crushed tortilla chips.

I spoon all my leftovers into individual servings and pop them in the freezer for easy allergy-free lunches or dinners for future use. I LOVE having a freezer full of safe meals!!!
