GLUTEN-FREE, VEGAN DONUTS


My assistant came into the office the other day and brought a plate full of the most amazing, freshly-baked donuts with her. She made them from scratch and with my son Julian in mind, who has a laundry list of food allergies. To be honest, I usually don’t like most gluten-free baked goods, but these were so delicious that I asked her if I could share the recipe with all of you. There is something to love about the gluten-filled, donut shop donuts that we all know and love, but these are a whole different ballgame and even better, in our opinion, because they come without the guilt of having more than just one. I hope some of you will give them a try, and if so, please let us know what you think!

Gluten-Free and Vegan, Baked Powdered Donuts by Mindy White

Prep time: 6 mins | Bake time: 9-12 mins
Makes 1 dozen medium sized donuts.

You will need:
1 1/4 cups all-purpose gluten free flour (You can use regular flour if you prefer.)
1/2 cup raw sugar
1 1/2 tsp baking powder
A pinch of finely ground sea salt
1/4 tsp cinnamon
1/2 cup vanilla almond milk
1 “egg” = 1 tsp of ground flax seed mixed into 1/4 cup of hot water (Or 1/4 cup of mashed bananas or applesauce.)
1/4 cup of vegan butter (Melted)
1 3/4 tsp 100% real vanilla extract

Coating:
1/2 cup of vegan butter (Melted)
1 cup of powdered sugar (Feel free to add more, if you need.)

Directions:
Grease 2 medium-sized donut pans, and preheat oven to 400° degrees. Sift your flour before measuring. This ensures that your donuts will be light, fluffy, and bake evenly. In a large mixing bowl, whisk all dry ingredients together. Set aside. In a separate medium bowl, blend all of your wet ingredients together. Next, pour the wet mixture into the dry mixture, and combine until there are no visible lumps. Pour batter into each donut round carefully, about 3/4 to the top. Pop into the oven to bake for about 9-12 minutes, or until golden brown. Remove from oven and place donuts on cooling rack.

For the coating: Melt butter in a small bowl. Pour powdered sugar into a medium bowl. Dunk each donut into the melted butter, letting it soak for a second before placing them into the powdered sugar bowl. I like to use my sifter again to “dust” the sugar onto the donuts, but rolling them around in the powdered sugar works just fine, too.
