6 Calorie Apple Pie Meringues!

Good morning!

Before heading to church, I wanted to leave this recipe with you. I said I’d do it last night, but couldn’t keep my eyes open long enough. I made these egg white meringues on Wednesday night to eat while watching Nashville. Have you ever had a night where you feel like eating everything in the house for no reason at all? I get those all the time and that’s when I make meringues. You can eat the entire batch for under 150 calories. They have protein, no sugar, or carbohydrates. You can make them in all flavors and shapes! I went the lazy route on these, but that doesn’t take away from their deliciousness! The recipe is super simple and most people have all the ingredients in their homes anyways.

Ingredients: 6 large egg whites, 1 teaspoon cream of tartar, 1 tablespoon apple pie spice, 1 tsp vanilla extract, 1/3 cup baking stevia.

Preheat the oven to 200 degrees

In an electric mixer, beat the egg whites until foamy.

After the eggs are foamy, add the cream of tartar and continue beating at a high speed until the eggs are soft peaks. (like a meringue pie)

Slowly add the stevia, vanilla, and apple pie spice in while the mixer is running on medium speed.

Grease your baking sheet with cooking spray and drop spoonfuls of the meringue onto the baking sheet. I went the lazy route and just dropped them on there. If you want them fancy, use a piping gun.

Bake the meringues for 1 1/2 hour or until the meringues are slightly crisp. If you don’t care for the crisp texture, you can bake the meringues at 350 degrees for 15 minutes.

Calories Per Meringue (1/4 cup size)

Recipe makes 20-23 meringues.
