Mini Whiskey Apple Pies

Here’s a recipe that combines a few of my favorite things: apple pie, whiskey, and miniature versions of things. I used some mini pie pans that had cute little stencil tops, which made it pretty easy. But you could really easily use this recipe to make a normal sized pie if you’d prefer. Anyway, here it is.

Mini Whiskey Apple Pies – ingredients:

for the crust

  • 2 1/2 cups flour
  • 1 cup unsalted butter
  • 1 tsp sugar
  • 1 tsp salt
  • 1/4 cup water

for the filling

  • 4 granny smith apples
  • 3/4 cups sugar
  • 2 tbsp flour
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 tbsp butter
  • 2 tbsp whiskey

Step 1: Prepare the crust

Cut the butter into pieces that are about 1/2 inch thick and freeze them for about an hour. Mix all of the dry ingredients in a food processor. Then add the frozen butter gradually, pulsing until it’s mixed in with the flour (there should be very small clumps of butter in the mixture). Add 1/8 a cup of very cold water and pulse a couple times, then add another 1/8 cup of cold water and do the same. At this point, the dough should stick together when you squeeze it (if not, add just a tsp or two of ice water at a time until it does). Knead it into a ball, wrap in plastic wrap and place in the fridge for an hour.

Note: if you don’t have a food processor, I’ve had success before using a potato masher to combine the ingredients. However, it will take a lot longer and is a really great arm workout.

Step 2: Prepare the filling

Peel each of the apples and cut into small slices about 1/4 of an inch thick. In a large bowl, mix all of the dry ingredients together. Then add the sliced apples and mix until they’re coated with the sugar mixture.

Step 3: Combine the ingredients

Once the dough has been in the fridge for at least an hour, remove it and spread it over your counter with a rolling pin. Then use pie cutters or a knife to cut out bottom and top crusts for your pies. Place the bottom crusts in your pie pan. Then add the apple filling. Melt a tbsp of butter and pour it over the filling. Then pour the whiskey over that. Add the top pie crusts and press down along the edge of each pie.

Step 4: Bake

Place the pies in an oven preheated to 425 degrees. After 10 minutes, adjust the heat to 350 degrees. Bake for another 30 minutes and then pull them out of the oven. Let them cool, cut each mini pie in half, add a scoop of ice cream if you so choose (you should definitely do this), and enjoy!
