Strawberry & Banana Puffed Pancake Recipe



Happy almost-pancake day! Yum! Today I'm going to be sharing a quick and simple puff pancake recipe. These aren't your typical make the batter and pour straight in the frying pan pancakes, they're more like a yorkshire pudding/pancake hybrid but they're just as good! (Can you even call these pancakes!? I might start calling them caketincakes)

Ingredients

- 1 cup of milk
- 1 cup of plain flour
- 1/4 cup of caster sugar
- 2 medium eggs
- 1 teaspoon of lemon essence (or vanilla, if preferred!)
- 1/4 teaspoon of salt
- Butter
- 1 cup of sliced washed strawberries
- 1 cup of sliced bananas
- Icing sugar to dust the top

Method

1: Preheat the oven to 425f/220c (this will vary depending on your oven, my cooker is ancient so I set it to the highest possible setting!) Grease two cake tins (I used 7" diameter) with butter and pop them straight in the oven to heat up.

2: Whisk the milk, flour, eggs, sugar, lemon essence and salt together until smooth.

3: Once your tins are hot, divide your batter into both and pop back into the oven. Bake until puffed around the edges and cooked through. Now this part took me an age because my oven is useless but if you actually have one from this century, it should take around fifteen - twenty minutes.

4: Remove from oven, place straight onto a plate and add your fruit as desired. I added a light dusting of icing sugar immediately and served straight away.
