Santa Claus Cupcakes

I’ve never been into cutesy holiday food before.

But, you see, my girl is 2 and a half this year and there are times I can’t resist doing things that make her smile.

What is it about the smile of a toddler that can make us do things completely out of character anyway?

I like to think I’m totally in control, but really? I’m just a sucker for her.

So I made some Santa Claus cupcakes.

Not that she really knows or cares who Santa Claus is. But she likes cartoonish characters in general, and seeing mom make something besides food out of food is pretty exciting for her.

When I made the No-Bake Christmas Tree cookies a little while ago, she was pretty stoked.

I mean, so was my husband, so I’m not sure you can blame the girl.

Anyway.

So there’s nothing gourmet about these. I didn’t even spend a lot of time staging the photos, but hey, I was only about 9 months pregnant at the time I made them so I’m hoping you’ll cut me a little slack.

Enough whining.

What you’ll need? Some cupcakes, some white frosting and something for spreading it, some shredded coconut, some red sugar or red sprinkles, some mini M&M’s, some mini marshmallows.

Start by spreading a somewhat thin layer of frosting onto the cupcakes.

Dip about 1/3 of the top of the cupcake into the coconut to form Santa’s beard.

Dip about 1/3 of the top of the cupcake (opposite the coconut, leaving the middle 1/3 clear) into the red sugar or sprinkles, forming Santa’s hat.

Place 2 of the same colour of M&M’s into the middle of the cupcake to make Santa’s eyes.

Cut a mini marshmallow in half (so you have 2 circles — this will keep the pom pom from sticking too far out of the cupcake). Place marshmallow half on one side of the cupcake, attaching to Santa’s hat to make the pom pom.

Enjoy! Some super simple cupcake decorating for the kiddos to take part in!
