One Pot Meal: Shrimp Boil

I love the what you would call “dump” meals. This is where you can take all the ingredients, dump it into a pot or pan and let it cook. This is a classic “dump” meal and is so effortless, it is crazy. This was such a fun meal to eat. We scooped out all the contents onto a small platter, placed some parchment paper underneath and went to town. Not only that but the flavor were amazing. By cooking the ingredients in a herb filled broth, they absorbed all the flavors with almost no fat.I will be doing this again very soon.

Juicy, Tender Shrimp, Creamy Potatoes and Fresh Corn, Cooked in a Broth with onion and garlic, lemon and herbs.

Ingredients
  • 1 lb 21-25 count peel on shrimp ( makes sure to get the shrimp de-veined)
  • 1 lemon
  • 1 yellow onion
  • 6 garlic cloves
  • 4 springs of thyme, leaves removed from stem
  • 2 TBSP Old Bay Seasoning
  • 1 TSP Red Pepper Flakes
  • 1 TSP Pepper
  • 2 TSP Parsley Flakes
  • 1 TSP Paprika
  • 2 Ears of Corn
  • 4 Red Potatoes
  • 32 oz. Low Sodium Chicken Broth
  • 4 cups of water
  • FOR GARNISH:
  • Old Bay Seasoning
  • 1 Lemon, Quartered

Instructions
  1. Shuck and clean corn. Halve the corn. Quarter the onion, cutting so the root remains intact. Peel garlic. Cut potatoes into quarters and then each piece in half one more time. Place corn, potatoes, onion and garlic in a large stockpot.
  2. Add chicken broth and spices. Add water to just cover the potatoes. Bring to a boil and cover with the lid slightly ajar. Simmer for 20 minutes, or until potatoes are fork tender. Remove from heat and add shrimp. Cover and let sit until fully cooked, about 3-4 minutes.
  3. Scoop out all contents onto a large platter or plate. Pour some of the broth over the mixture. Garnish with lemon juice and more old bay seasoning. ENJOY!
