Cinnamon Apple, Roasted Pecan & Banana Frozen Breakfast Waffles

This was sooooo good. See that photo? I ate it. Well, not the photo exactly but the breakfast for sure. My favorite thing? They’re frozen waffles. That means that if you make the apples and roast the nuts the night before you can quickly put this together for your whole family even when you’re pressed for time…like I was today.

After a busy morning getting everyone where they needed to go, I still hadn’t had breakfast! I only had a little bit of time before I had to get ready and go too. I was super glad that I took a few minutes to enjoy my breakfast though because I ended up being gone a long time. Yep. Breakfast = important. Thank goodness it was fast! Our family gets up super early to get our days going. It’s awesome to be able to have a delicious meal without going to much trouble. This one is so simple, I hope you’ll give it a try! You can make the cinnamon apples the night before but they only take about 5 minutes. While you cook the apples you can roast the nuts, I’m using pecans.

Ingredients
  • 2 Apples
  • Pecans
  • Bananas
  • Aunt Jemima Frozen Waffles
  • pumpkin pie spice

Instructions
  1. Dice apples.
  2. In a medium saucepan sprayed with cooking spray, saute the diced apples and ½ teaspoon of pumpkin pie spice over medium-heat until lightly browned and tender, about 4 minutes.
  3. Break pecans into small pieces.
  4. Roast pecans on a coated cooking sheet at 350 for about 5 minutes or until you can smell them roasting. Watch to keep from burning.
  5. Slice bananas.
  6. Serve waffles layered with bananas, cinnamon apples and roasted pecans.
  7. Add syrup as desired.

Making cinnamon apples and roasting nuts is such a nice little extra for your morning breakfast and it only takes a few minutes.

I picked up our Aunt Jemima waffles at Publix. I love to shop there. The people are so nice! I love that they offer to take your groceries out for you too. So helpful!
