RECIPE: Ground Beef Stir Fry with "Sunshine Sauce"


I am all about easy food as I try and navigate this new life.
Sometimes this new life is tricky because it contains very little dairy (some cheese sometimes, but that's it), no grains, no legumes, and no refined sugars. I really used to like those things. My body did not. I'm so happy with the way I feel now and when I slip up and allow too many treats, my body lets me know how it feels about it. It it's not fun.
It's meals like this that are great for getting back on track. Super easy food is my favorite.

*Whole 30 and Paleo Friendly*
Ingredients: water red bell pepper big handful of broccoli big handful of green beans 1 lb grass fed ground beef coconut oil garlic powder salt pepper one batch of Sunshine Sauce from The Clothes Make The Girl (it's like a peanut sauce without the peanuts)
Directions: Make up the Sunshine Sauce in your food processor. I LOVE my mini cuisanart. After you make the sauce, try not to lick the blade. The sauce is delicious, but that's a bad choice.
Pour 1/2 cup of water into a large skillet and let it come to a boil. Toss in your veggies and cover them with a lid and let them do their thing for about 4 minutes. Drain and set aside.
In the same skillet (because I'm too lazy to dirty two skillets), brown your ground beef. Drain and set aside.
Heat up some coconut oil in your skillet. Just eyeball it but maybe 2 tsp? Enough to cover the bottom. Toss is your veggies and seasonings and sauté for a few more minutes. Maybe 3. Enough to coat them in the yummy fat and seasonings. You could also add some turmeric here. I don't have any right now so I didn't, but it adds little to no flavor but is loaded with anti-inflammatory properties.
Now assemble your bowl. I am a firm believer that everything tastes better in Fiestaware. Especially pink Fiestaware. Veggies first, then meat, then sauce. Stir it up and ENJOY.
Tips for leftovers: I like to mix whatever meat is left with whatever sauce is left and store it in a glass container in the fridge for the next day. If you have veggies left, store them in a separate container. This just makes the reheating experience better. Sometimes we don't have veggies left so if that's a problem for your leftovers, just make another batch.
