Chocolate covered almonds with raspberry hats

Almonds covered in raw chocolate and then topped with cute little raspberry hats are one of my favorite treats at the moment, they are so simple to make and the dark rich flavor of the chocolate goes so well with the fresh raspberries. I have already eaten most of this batch (I only made it last night) – haha and the only thing holding me back from eating the rest it that I ran out of raspberries!

Ingredients:
100 g. almonds
2 tablespoons raw coconut oil
2 tablespoon raw cacao
1 tablespoon acai honey or agave
A pinch of salt
Fresh raspberries

To make the raw chocolate simply melt the coconut oil on low heat and mix in the cacao, honey and the salt. Dip the almonds in the chocolate (I used a fork) until they are completely covered and place them on a tray lined with baking paper, when you are done let them cool in the fridge until the chocolate have hardened and then you can give them a second layer. Before serving add the raspberry hats and you are done, enjoy!

Coconut oil has a low melting point, so keep the almonds in the fridge to prevent the chocolate from melting.
