Another one of my, "oh shit I have shit left in my fridge and I better use it before it goes bad" recipes! Individual desserts in mugs is a stellar idea and something I will definitely utilize in the future. Now get to drizzling on that chocolate sauce!

INGREDIENTS: 1/4 cup vegan cream cheese 1 small container coconut yogurt 2 tbsp powdered sugar 2 tsp vanilla 4 cups sliced strawberries Lemon juice 1 tsp sugar 1/4 cup almond milk 1/2-1 package dairy free chocolate chips
ALSO NEED: Large mugs
DIRECTIONS: 1. Toss the sliced up strawberries with a bit of lemon juice and sugar in a big bowl. 2. In another bowl, use a mixer to combine the cream cheese and yogurt. Add powdered sugar and vanilla and whip up into a creamy frosting. 3. Put into a ziplock bag and place in the freezer or fridge to firm up and keep cool. 4. Over medium low heat, warm up almond milk and chocolate chips in a pot. Stir, stir and stir until it is a sauce and all melted up. Do not burn! That would be gross. 5. Let the chocolate sauce cool. Take out your frosting and cut the corner to make a pastry bag which you can then use to squeeze into the mugs. 6. Layer all those yummy ingredients in a mug. I did a dot of frosting, layer of strawberries, few spoonfuls of chocolate, dot of frosting, strawberries then a fancy dot of frosting and light drizzle of chocolate. 7. Get a spoon and gobble it up or cover and refrigerate for later! The chocolate will become more pudding like in the fridge. - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - -
