Potato Salad



I whip up this potato salad to go with all sorts of things. It's a really basic recipe and always gets eaten up fast. It would also be great for taking to a party! No peeling required, so what are you waiting for?

INGREDIENTS: 3-5 potatoes 1/2-1 cup Vegenaise 1/2 cup fresh chopped parsley Salt & pepper 1 Tbsp mustard
DIRECTIONS: 1. Wash 3-5 potatoes well and chop up into 1/2-1 inch size pieces. If you watch the video, I show you an easy way. 2. Boil a pot of water about 3/4 way full, throw in a dash of salt. 3. Add the potatoes and bring back to a boil. Let simmer until the potatoes are soft. 4. Drain the water and let cool. 5. Put the cooked potatoes in a big bowl and stir in Vegenaise, chopped parsley, mustard and salt/pepper to taste. 6. Stir well and garnish with parsley.
