Orzo Soup with Spinach and Peas...from the kitchen of One Perfect Bite courtesy of Fine Cooking magazine Ingredients: 6 cups lower-salt chicken or vegetable broth
1/2 cup orzo
1-1/2 teaspoons dried oregano
Kosher salt
1/4 cup coarsely grated yellow onion
1-1/2 oz. (1-1/2 cups) finely grated Parmesan cheese
3 cups baby spinach
1/2 cup frozen peas
2 tablespoons fresh lemon juice
Freshly ground black pepper
Direction: 1) Combine broth, orzo, oregano, and 1 teaspoon salt in a 3- to 4-quart pot. Cover and bring to a boil over high heat. Uncover, add onion, and reduce heat to medium. Simmer until orzo is just tender, about 2 to 3 minutes.
2) Remove from heat, and whisk in cheese until fully incorporated. Stir in spinach, peas, and lemon juice. Season to taste with salt and pepper, and serve immediately. Yield: 4 servings.
