Grilling Sides – Southern Style Potato Salad Recipe

One of my mom’s most loved recipes is her southern style potato salad. I have to admit, it is amazing. She makes it for all of our summer family gatherings and my hubby eats the most. {grin}

It’s super simple to make Southern Potato Salad! You’ll need:

  • 1 medium onion, finely chopped
  • 7 large potatoes, peeled, cubed
  • 1 tsp. salt
  • 10-12 hard-boiled eggs, chopped
  • ½ cup sweet pickle relish
  • Paprika, salt, and black pepper to taste
  • 2/3 cup mayo
  • 4 tbsp. Gulden’s Mustard

Easy steps:

  1. Boil chopped and salted potatoes in a covered dish for 14 minutes or until until tender. Drain.
  2. Add onions to bowl, pour hot potatoes over top and allow to set for five minutes. Hot potatoes will cook the onions a little and soften them up.
  3. Peel and chop eggs. Add to bowl.
  4. Add pickle relish.
  5. Add mayonnaise.
  6. Add paprika, salt and pepper to taste.
  7. Add mustard.
  8. Gently fold and refrigerate.
