Fruity homemade quark spelt bread

I have baked a couple of quark loafs before, but they were half as big as this big momma. I made one with a banana and persimmons and it was my favorite, but since it’s hard to find persimmons at the moment, these do come fairly close!

What you need:

  • 500ml quark
  • 4 mid sized mashed bananas
  • 1 large banana for topping
  • 2 chopped nectarines with skin
  • blueberries (to taste)
  • goji berries (to taste)
  • pecan nuts (to taste)
  • 3 cups spelt or oat flour (or flakes, just blend the flakes into flour before doing the rest)
  • 1/2 cup coconut flakes
  • 4 tbsp chia seeds
  • 1 tbsp ginger powder or fresh rasped ginger
  • 4 tbsp gingerbread herbs (Dutch: speculaas- en koekkruiden)
  • 1 tbsp vanilla essence
  • 1 tbsp baking powder

Instructions

  • Pre-heat oven to 200C/390F.
  • Blend everything except the blueberries, goji berries and pecan nuts. I used a foodprocessor. Feel free to use any other additions to taste.
  • Fold in the blueberries, goji berries and pecan nuts with a spatula, and add the mixture to a greased baking mold. I use mostly coconut oil for greasing.
  • Bake for about an 60 to 75 minutes, depending on your oven. Just keep an eye on it, the toothpick must come out clean from the middle. When the top gets too dark and it still needs a little time, lower the temperature a bit.
