Homemade peanut butter

Hi guys! Have you missed me..? =P Was a bit offline here, mostly because I was fully uninspired and the returning low energy has made it impossible for me to be creative, let alone bake, cook etc something nice that’s post-worthy. As most of my Instagram followers have noticed, I’m a nanny and this week was the first time working 3 days at my own home. Usually you’d think it’s more convenient than working at their house because you have everything you need close-by, but I didn’t have a rocking chair for the little nugget yet, and this made it almost impossible to walk more than 5 meters away since she has be rolling around like a mad woman! And when she was asleep, I was either outside running errands with her in her stroller where she AL-WAYS falls asleep in, or I wanted to clean my home. And I don’t know, but I walked every working day for at least 4 hours; 1 hour from home to her home to pick her up, then 2 hours during the working day, and 1 hour back, just because I love it and the weather was amazing. Maybe that has also been the reason why I’ve been so tired; little sleep and maybe too much exercise can also be a negative thing! But the rocking chair is here now so I can have her sit in the kitchen right beside me while I’m working my magic =D and the next 2 weeks I’m even off from taking care of her as she’s on vacation and only work Wednesdays at the other family’s home, so I am fully back!

On-topic: The homemade peanut butter! My bf’s been a chef for a long time and never ever made peanut butter in his entire life, so he was very skeptical about it, but guess what?? He LOVES it! Who knew!! As I am a full rookie when it comes to making any nut butter, I used the recipe from thekitchn.com and amended it a little bit. My lovely Alina inspired me to use vanilla in it, and boy it was a perfect choice!!

What you need:

  • 2 cups raw peanuts (no shell)
  • pinch of pink Himalayan salt
  • 2 tablespoons coconut or peanut oil (optional but recommended for even more smoothness)
  • 1 tbsp coconut blossom sugar or any sweetener, to taste
  • 1 tsp cinnamon
  • 1/3 vanilla bean or to taste
  • Optional: Add any other nuts, raw cacao powder, or some chocolate chips.

Directions:

  1. Heat the oven to 175 Celcius / 350 Fahrenheit and roast the peanuts for about 10 minutes until they are goldish and oily. This will add an amazing taste to the peanut butter!
  2. Place the peanuts in a food processor while they’re still warm and grind them until they are roughly chopped. If you wish to have a more crunchy peanut butter, set aside 1/3 cup for later.
  3. Grind for 1 minute, stop and scrape down the sides and the bottom. The mixture is now fairly dry.
  4. Repeat step 3 two more times.
  5. Add the salt, oil, sweetener, cinnamon, vanilla bean inside and anything additional you like.
  6. Process again until your desired smoothness and add more salt or other additional items until you are happy with the taste. I didn’t add anything, it was amazing just like this :) You can now add the 1/3 cup of nuts if you’ve put it aside for an extra bite.
  7. Store in an air-tight storage container, in the fridge for at least a couple of weeks.
