Clean coconut carrot cake

Hi guys! Have you enjoyed your weekend? I sure had a nice long one, in which I finally got to do what I’ve always wanted: SURF! And not once, but twice =D I can’t tell you enough how much I’ve loved it, and me and my friend feel so silly and sad for doing it in the end of the summer season, which means most of the surf schools where you can also rent boards will be closed from October on. Sucks! But we have a couple of beaches where we can go to for a couple of surf hours, it just takes a little longer to get there. But I’m hooked and just like when not working out, I feel useless on a day like today, the day after my second surf day :( I thought it was time for comfort food: An oatie coconut carrot bread/cake kinda thing, I don’t even know how to call it haha. It was actually a bit too much, but you can of course just slice off what you want to eat and spread it with the toppings.

What you need for a 15 cm (in diameter) round baking mold:

  • 1 cup oat flour (or any flour of choice, just blend oats into flour)
  • 1/2 cup coconut flour (blend coconut flakes into flour)
  • 2 cups grated carrot (about 4 medium sized carrots chopped and grated in food processor)
  • 2 tbsp cinnamon
  • 1 tbsp ginger
  • 1 egg
  • 1 tbsp melted coconut oil (or any oil of choice)
  • 1/4 cup quark or yoghurt
  • 4 soft and pitted dates (soak them when they aren’t soft enough)
  • 2 tbsp vanilla essence
  • 1/4 cup coconut rice milk or any milk of choice
  • 1 big hand full mixed seeds

Directions:

  1. Pre-heat oven on 180 C / 250 F.
  2. Mix the oat flour, coconut flour, cinnamon and ginger in a big bowl.
  3. In another bowl mix the egg, coconut oil, yoghurt or quark and vanilla essence in another bowl.
  4. Pour the wet ingredients into the dry ingredients, add the milk and mix well with your hands.
  5. Add the grated carrots and mixed seeds and mix again.
  6. Last but not least, mix in the dates with your hands, then taste if it’s sweet enough.
  7. Optional: Add coconut sugar, honey or more dates to sweeten it up.
  8. Bake for 30 minutes, until toothpick comes out clean.
  9. Frost it with yoghurt or quark and top with whatever you like. I used blueberries, a fig, coconut flakes and cacao nibs.
