Four Cheese Buffalo Chicken French Bread Pizzas

This is definitely one of the easiest pizza “recipes” ever and therefore is completely perfect for Friday nights. In my house, Fridays warrant special dinners. Friday food. You know, the kind of things you want to eat all week but don’t because you also want your jeans to fit. But on Fridays, you can totally let loose. You can put four different kinds of cheeses on a gigantic piece of bread and call it dinner. Serve it with a beer and call it a party. Whatever you want. It’s Friday.

Four Cheese Buffalo Chicken French Bread Pizza

serves 4

1 large loaf French bread

1 pound boneless, skinless chicken breast, cut into bite-sized pieces

1 tablespoon olive oil

1/2 cup buffalo sauce (we like Sweet Baby Ray’s brand), plus extra for drizzling

1/4 cup Greek yogurt ranch dressing, plus extra for drizzling

4-6 oz. each fontina, havarti, sharp cheddar, and pepperjack cheeses, grated

2-3 green onions, sliced

2-3 tablespoons cilantro, chopped

1. Preheat oven to 350*. Saute chicken breast chunks in olive oil until cooked through and lightly browned. While chicken is cooking, grate cheeses and slice bread into 4 pieces

2. Combine buffalo sauce with ranch dressing and evenly spread the mixture on each piece of bread. Divide chicken evenly among the pieces then top each with cheese. Don’t be afraid to pile it on.

3. Bake at 350* for 10 minutes. The cheese should be beginning to bubble. Give another minute or two if it isn’t. Then, turn on the broiler and broil on high for 1-2 minutes until cheese is bubbling and edges are browned.

4. Remove from oven and drizzle each piece with additional buffalo sauce and ranch dressing. Top each with green onions and cilantro.

You can serve these with a salad. Or not. Also, the recipe says this serves four but if you split it between two, I won’t tell. It’s Friday, remember? Enjoy!

(I totally made these on Friday night after Jessica from How Sweet Eats (my favorite blog) posted a barbecue chicken version that morning. It pretty much consumed my thoughts all day at work so I knew I had to make this happen when I got home. My recipe has been a stand-by in our house for ages and wasn’t meant to be completely jacked from her blog even though it may seem that way ;) )
