Salted Caramel Sundae Recipe.

One of my favorite childhood memories is of making ice cream sundaes with my mom and sisters. I literally grew up in a restaurant (our house is attached to the restaurant) so we always had homemade chocolate sauce caramel sauce on hand. And today, I love making homemade caramel sauce when I have friends over for dinner… it seems like such an extravagant/time-consuming touch, but it’s really just melted butter sugar.

Recently, Coffee-mate challenged me to come up with a recipe using one of their three nostalgic flavored creamers (Classic Vanilla, Caramel Macchiato and Toll House® Chocolate Chip Cookies) and I immediately knew it had to be a salted caramel sauce. It came out even better than I could have imagined. It’s incredibly delicious… and so, so easy to make. Adding the Coffee-mate Caramel Macchiato flavored creamer to the sauce is the secret weapon… it makes it extra creamy, without actually using cream.

You’ll need:

  • Coffee-mate Caramel Macchiato flavored creamer
  • 1/4 Stick (two tablespoons) butter
  • 1/2 cup Milk
  • 1 cup of brown sugar
  • 1 teaspoon vanilla extract
  • A big pinch of salt

Combine everything except the Coffee-mate in a pot, and cook on medium-low heat… stirring slowly.

Once everything is warm and melted (but not boiling) add in 2 teaspoons of Coffee-mate Caramel Macchiato flavored creamer.

Continue to stir slowly, for 7-8 minutes. It will bubble up like the photo above, but that’s good… it’s thickening! If your sauce isn’t as thick as you’d like it, just continue to cook stir until you get your desired thickness.

I stored mine in a glass jar (this also makes a great homemade hostess gift if you’re headed to a friend’s for dinner) and set aside a little bit to enjoy immediately… drizzling it over my favorite (Three Twins!) cookie dough ice cream.

Not surprisingly, I also love the Coffee-mate Caramel Macchiato flavored creamer in my coffee. I like my coffee really light, so I typically add a little bit of milk and then 1.5 teaspoons to my coffee. It makes it feel like I’ve gone to a proper coffee shop for a fancy drink… without having to put pants on and leave the apartment. Perfect. (And because I know you’ll ask.. my mug is Minnie & Emma. I love it because it’s nice and big! The more coffee, the better.)
