I love homemade granola bars for breakfast on the go and late afternoon snacks. When I got home from Miami, I noticed I had 4 super ripe bananas and few of my regular go to snacks so I whipped up a quick batch using what I had in my house. The result was a delicious coconut and flaxseed success.
Made with just a few ingredients, you can easily add in dried fruit, nuts or chocolate chips for your own variety. Each bar is about 150 calories, is naturally gluten free and vegan. Each one also has 9g of heart healthy fats, 6g of protein, 11 carbs, 4g of fiber and 3g of sugar.
This morning, I brought one to Barry’s to eat after teaching but before my own workout. It was the perfect energizing snack.
Coconut & Flaxseed Granola Bars (Gluten Free, Vegan) Makes 16 servings
Substitutions: You can omit the protein powder if you would like. If your batter seems a bit wet as a result, add in 1/4 cup of extra oatmeal. You can also sub the Truvia Natural Sweetener for 2 tbsp of agave or honey.
I cut half of my batch right away and the other after they had cooled down, so it really doesn’t matter too much! Enjoy.
