Summer Dessert: Smooth Cacao Chia Pudding, Vegan & Sugar Free

Am I the only one that hates the feeling of chia seeds grinding in between your teeth? I like the taste of chia pudding, but the texture not so much. It is a perfect sweet treat at the end of a clean eating day. Naturally gluten free and vegan, I was curious what would happen if I put chia pudding into my blender and was shocked at what came out! This easy to make dessert is a fun party idea for your fourth of July party by adding some fun color and serving in small “jell-o shot” cup. hint: People eat a lot more dessert when they appear to be mini servings.

Smooth Cacao Chia Pudding

Here is what you need:

  • 2 tbsp Chia Seeds
  • 2 tbsp Cacao Nibs
  • 400mL Light Coconut Milk (1 can)
  • 2 truvia natural sweetener packets
  • 1 teaspoon vanilla extract
  • dash of Himalayan sea salt

Directions:

Combine ingredients in an air tight container. I used a mason jar. Let the seeds sit for 2-4 hours or until liquid is absorbed. Pour pudding mixture into a blender. I used a BlendTec and used the ice cream setting.

This mixture was was whipped. It was filled with air and was almost like a mix between jell-o and marshmallows. You could eat the pudding like this by itself.

To make this into a more party friendly dessert, put a heaping tablespoon into little plastic containers and top with blueberries or strawberries. Arrange like an American flag for a 4th of July party.

For a sweeter treat, add in a third packet of truvia natural sweetener or teaspoon of honey.

I can’t believe it took me so long to try this variation on chia pudding. I also find that is tastes better with the canned coconut milk than the kind in a box. The chia seeds absorb much more of the liquid. Enjoy!
