Guilt Free Healthy Football Food Fix: Vegan Nachos

When it comes to fall weekends in addition to pumpkin everything, wings, burgers, dips, sausages and more might come to mind thanks to tailgating season. My favorite guilty treat are nachos. I like knowing where my ingredients come from and making them at home satisfies my craving. Unlike it’s restaurant counterpart, this recipe has zero cholesterol, 0g of trans fats, and tons of protein.

Cheese is actually the number one source of saturated fats that American consume which has been linked to ailments like inflammation that may cause heart disease, diabetes and cancer.* I try to avoid dairy but when it comes to my favorite foods like frozen yogurt and nachos, I just make my own alternatives.

Vegan Sweet Potato Nachos (Makes 6 Servings)

Time: 20 minutes total

Ingredients:

  • 2 Large Sweet Potatoes
  • Organic Tortilla Chips (optional)
  • 1 can Vegetarian Chili
  • 2 tbsp Black Olives, sliced
  • 2 tbsp Jalapeño Peppers, sliced
  • 1 cup GO Veggie! Mexican Shreds

Directions:

Slice up the sweet potatoes thinly. Place on a baking sheet and lightly spray or coat with extra virgin olive oil. Add salt and pepper to taste. Place under a broiler until tops begin to look golden brown. Flip chips and cook on opposite side until color matches.

Arrange on cookie sheet with tortilla chips.

Add vegetarian chili on top. You can add the whole can or just half depending on your preference. Again, you can use vegetarian or regular. Your choice.

Next, sprinkle on the GO Veggie! Mexican Shreds until chips are well covered. Add black olives and jalapeños.

Place cookie sheet back in the oven under the broiler. Cook until cheese is well melted to desired consistency.

Enjoy with a fork or your hands! The sweet potato chips add a little bit of sweetness and may hold up their own or you may need a fork. This is one comfort food you do not need to feel guilty eating every weekend this fall. I love using the vegan GO Veggie! Mexican style shreds as they are one of the few nondairy cheese that melt!
