Something Fishy

My mother-in-law is a seriously good cook. I mean, a-mah-zing. But of all the things she makes, from the impossible-to-get-right floating island dessert to unbelievable roast chicken, it’s her Caesar Salad dressing that I love the most (why do you think I married her son… To crack that recipe, obvs). In the spirit of sharing, and because I’ve been eating mounds of it of late, here is the only Caesar dressing you will ever need to make again. Just don’t tell her I gave it to you (*wink wink*).
But seriously, don’t!


The Best Caesar Salad Dressing Ever

• 4 cloves of garlic, peeled
• 1/4 cup lemon juice
• 1 egg
• 1/2 cup grated parmesan
• 1 TBS Worcester sauce
• 1 cup oil (sunflower is best, but olive will do)
• 1 can or bottle of good quality anchovies

Blitz the lot together and drench a salad of cos, iceberg or butter lettuce, croutons and whatever other goodies you like in your Caesar: bacon, chicken, green beans or boiled eggs.
