The Tale of the Five (Yes, FIVE) Pound Zucchini


I had another post ready to roll for this evening, but I hadn't yet typed it, and after battling this big, bad monster, I'm spent.

Take a look at that hoss.

No, I mean it. Take it all in. The sheer size of that titan. That is a standard size teaspoon up there next to it, just so you can have something for reference.

A beast, I tell you.

Two weeks ago Jana asked if I wanted a zucchini, and I said, "Of course," having decided not to grow any for just this reason--the neighbors all share their bounty.

She warned me it was rather big, that it had been lost and forgotten under a leaf...or ten...

When Sally came out of the house stumbling under its weight I knew it was bad.

Really bad.

Zucchini this size are good for one thing and one thing only--shredding and baking.
I left it sitting on the counter for two weeks. Two weeks! It sat there staring at me, daring me to do something with it.

I'm not ashamed to admit I was intimidated by that sucker.

Okay, maybe intimidated isn't quite the word I'm looking for. Let's go with reluctant. Yes, that's the word.

I knew that if I was going to do anything with that sucker it was going to take quite a bit of time and I was feeling rather lazy after the rigors of swim season. (I was, I swear! It had nothing to do with the fact I just wanted to be a lazy slug and lie around doing nothing...)

Zucchinis that size are notoriously seedy and there'd be no frying it up.

Nope.

So, I sliced it open, scraped out the seeds, and went to town. I had found a lovely and likely looking zucchini muffin recipe that called for 1 1/2 cups shredded zucchini that I wanted to try, figuring there couldn't be that much more zucchini.

I was sadly mistaken.

That bowl up there has three cups of zucchini in it.

Three! I doubled the recipe there was so much.

And the rest?
Eleven more cups of shredded zucchini.

Oh.

My.


I'm reminded of the summer we had zucchinis coming out our ears and Lissie was doing everything in her power to use them up and not waste them. We had zucchini cake and zucchini bread and sauteed zucchini and fried zucchini, and she even jammed spears of zucchini down in with her bread and butter pickles.

Zucchini is the gift that keeps right on giveth--ing. Oy.

As for the muffins I made?

I'm happy to report they're quite tasty and, as with anything zucchini related and baking, it masquerades of healthful food (it has zucchini in it!!). We'll just forget that whole sugar and chocolate chips thing, shall we?

They were a delightful dessert tonight and should make an even more delightful brekky tomorrow morning. ;o)

As for the zucchini, as long as Jana has it coming in, I'll keep on taking it. Here's what I did with more of her zucchini tonight:
Fried zucchini spears! We served them with a basil aioli for dipping. Mm. I had planned on having a repeat tomorrow night, but then thought that might not be nice for dentist the following morning. Oh well. We'll have them again Wednesday night. ;o)

However you look at it, it's been quite the zucchini day. :oP

1.
I saw the most beautiful golden glow pouring out of the offudio this morning and had to go take a look. It really did make my heart sigh just a little bit.

2. Saturday morning we had a family huddle and I told the girls we were done with summer laziness and starting Monday we were getting out and getting moving every morning (I seriously miss swim team...who woulda thunk it?).
So, we took a stroll (meander?) around CW. The weather was lovely--low-80's, slight breeze, not bad humidity. And, it wasn't too crowded either. :o) I didn't see any of my regulars, but it still did my heart good to get out and about my morning "home".

How about this fun guy? He's an heirloom variety they grow in the CW market garden.

Ugly beastie, isn't he? I didn't chop him up tonight, I'm saving that for tomorrow. My bet is he tastes delicious. :o) We stopped by to wander through the garden--Lil wanted to check it out--and the lovely lady there asked if the girlies might be interested in helping her water her garden. Well, yeah they were! I was chatting with her about the tomatoes and she offered me one! How cool is that?

4. Getting out and getting moving. I may think I love slug days, but really, they just leave me feeling all sorts of blah. B and I have taken about a month off running--he hurt his knee, and apparently I'm way too codependent by half--and with no swim team to keep me busy either, I've been pretty much sitting on my duff. This is NOT good for my mental health. I'm really looking forward to tomorrow morning's run, even if it ISN'T that far of a run...I have a feeling Miss Lazy Bum here is going to be suffering for her lack of movement. :oS

5. When we had our Family Huddle Saturday morning, I also told the girls we were recommitted to making better food choices as well. We all feel better when we eat more healthfully, and need to remember junky stuff is "sometimes food" for a reason.

6. It's so good to have my Bitty back home once more! :o)
