Girlfriend date nights are always welcome, especially smack dab in the middle of a busy week.
Last night I got together with my foodie friend for a healthy meal in her comfy and quaint apartment that she only moved into days prior.
Let’s cook!
She has already broken in the kitchen by making a jumbo Ball jar of blueberry ginger kombucha(!) and canning fig walnut thyme lavender jam; but, we celebrated good food and friends with mason jar Moscow Mules (of course!) and a kale soba noodle salad.

Our inspiration for dinner was actually this Kale Salad with Peaches, Corn & Honey-Basil Vinaigrette, but we left aside the bread for buckwheat (soba) noodles instead. Lavender chevre and a fresh fig garnish made for an extra unique tasting experience.
Tonight, I used the leftover soba noodles and kale, added raw veggies and sesame, and tossed it all with homemade peanut sauce – nothing better than a cold noodle salad after a sweaty at-home workout!
