3 Ingredient Peanut Butter, Banana, Oatmeal Cookies Recipe


Amanda posted these peanut butter, banana, oatmeal cookies on her Instagram feed yesterday {without chips but WITH Nutella} and I LITERALLY COULD NOT NOT MAKE THEM. In fact, I only waited about two hours and then whipped them up in about 14 minutes total.

I looked around for similar recipes on the line {online} -just in case I was missing something, and couldn’t really find one similar, so I used her quick recipe on her photo - but enhanced, and added to it… basically making it less healthy by adding chocolate chips and using Jif peanut butter instead of natural/no sugar.

So they’re not the healthiest of healthy -but they are healthier than most… and though they’re not incredibly sweet, there is some sugar in the cookies from the banana & peanut butter, but without adding sugar. All in all, 3 ingredients {not including the chips} is pretty amazing and healthier than most of my dessert choices, making these the perfect cookie to keep on hand for that afternoon cookie fix and are delicious with hot tea, coffee, or milk. But really, if you made them without the chips, and with healthier peanut butter, they’d be GREAT for breakfast!

What You’ll Need…

* 1-2 Bananas based on the size. I used about 1-1/2 small bananas
* 1 huge spoonful of peanut butter. It was probably almost one cup
* 1 heaping cup of oats

* OPTIONAL: Semi-sweet chocolate chips

* Pre-heat oven 340…

* Mix ingredients together until all bananas are invisible {is my best tip}. I used a hand mixer. I sprinkled in about two tablespoons of chips after my dough was mixed, then just stirred them in.

* Spoon onto pan {greased if necessary-and who uses a spoon? I used my hands ;)} and bake for about 10-11 minutes. They will not flatten out like regular cookies, but look pretty much the same as when you put them in raw. The edges and bottom get a little crispy, the perfect amount really.

* Makes about 12 large cookies or 16-20 small ones

And… Voila!

* The pros: they’re so good you’ll want to eat them all right out of the oven
* The cons: they’re super filling so you can only really eat about 2, which is also actually a pro in disguise
