Easy Berry Muffins Recipe

Hello lovelies, happy Monday! It’s cold and grey and rainy in Sydney today, though I am told by some very reliable Sydneysiders that we have a couple of weeks more of cold weather and then bam 8 months of sunshine and nice weather. Can’t be bad.

Let’s talk berry muffins.

I first had these strawberry muffins a couple of months ago sitting with a few friends having coffee by the sea…they were delicious strawberry muffins made by my friend M. I stuffed one in alongside a hot coffee after a long walk – there is nothing quite like a post walk muffin is there?…pretty much guilt-free and delicious in one big happy hit. Even better, in fact probably a million times better, when you haven’t made it yourself.

I asked her for the recipe and here we are (I knew you might like it too) – I love recipe sharing, they are probably the very best recipes aren’t they? Especially good if when you ask, the reply is yes it is not only good, it’s super easy and quick.

I love an easy muffin recipe and though not a natural baker, I do want my kiddos, heck my hubby, to think that muffins do not come from Betty, you know as in a packet and Crocker…

Berry Fruit Muffins

2 cups self-raising flour

1 cup brown sugar

2 large eggs

1/2 cup canola oil

3/4 cup milk

2 cups fresh or frozen berries

rolled oats & raw sugar to top

1. mix flour and brown sugar

2. whisk eggs with milk and oil

3. gently fold milk mixture into flour until just combined

4. fold through fruit

5. spoon into muffin tin & sprinkle with oats and raw sugar

6. bake for 20 minutes 180C

I’ll be off then…to eat a muffin ;)
