Beach Cottage Slow Cooked One Pot Mac Cheese

Good morning!

I don’t know about you but cheese, milk and pasta, combined, you know, it is just comfort food…a big warm plate of cheesy pasta or mac n’ chesse as you may know it, and everything defuses, spines de-compress, brains begin to get less fuzzy, hungry children go silent…

I have been making cheesy pasta, as I am guessing the rest of the mothers in the world have, since my rather large child was a bub….to me it’s never been fancy, I have never quite understood why one would mess with a simple and delicious recipe too much, I love and gravitate to anything that is just put together with easy ingredients and not much fuss.

A while ago I came across a one pot mac n’ cheese on the internet…I thought it would change my life…once getting into it though it turned out it wasn’t Beach Cottage one-pot (you know one pot to me is : step one, get out a pot step two, throw everything in, step three, the end) it required pre-cooking of the pasta, hmmm – sorry I don’t do pre-cooking and not only that, making a sauce. Nup.

Then this one came into my being, I have no idea where I first saw the recipe now, but I read it and thought I would try to adapt it and give it a go in my slow cooker – it was ok, I tweaked it a bit too and if I am really rushed and have nothing in the cupboard but some pasta and some cheese in the fridge, then I throw this in the slow cooker in the morning for when I come home, but really it’s nicer in the oven – with the oven you get the crusty cheesy delicious bits. With the slow cooker you get more of a cheesy mush.

So yeah this is slow cooker macaroni cheese in the oven (though it’s not macaroni, I’m not sure why but I actually don’t often buy macaroni, ummm actuallyI do know why, when my kiddos were littlies they preferred twists) - pop it in in the middle of the day and let it tease you as you go about your business…you need do nothing much else to it than add some green leaves and a glass of wine.

For this I teamed up with the Woolworths Gold Range and used their lovely premium products for a very simple dish…the result was, it has to be said, really, really good…as a mum and chief chef of this little cottage I am always looking out for lovely special products to treat our little family with…the Gold Range is just that…simple, indulgent food from top speciality food producers around the world and still easy and accessible in my local supermarket…love that.

Easy One-Pot Cheesy Pasta aka Baked Mac and Cheese

350g dried pasta I used Woolworths Gold 100% Durum Wheat Pasta

4 cups milk

fresh thyme

parsley

salt & pepper

1 cup breadcrumbs

2 tsp dijon mustard

300g cheddar cheese grated

200g vintage cheddar cheese grated I used Woolworths Gold West Country Vintage Cheddar

1. grease the inside of a casserole and line with alternating layers of pasta and cheese (keeping about half of your vintage to one side)

2. whisk milk, salt & pepper and mustard in a measuring jug/bowl and pour over pasta

3. sprinkle the breadcrumbs and thyme on top

4. cover with foil and bake 6 hours 100C

5. 15 minutes before the end of cooking turn the oven up to 220C, remove the foil, add the rest of the vintage cheese to the top and bake until brown.

notes : this is nice as leftovers so I mostly make double this recipe * make sure your pasta is pushed down into the milk – so you may need to adjust the dish you use so the pasta is covered in the milk/mustard mix – you can also top up the milk/cheese a tad to make sure the pasta is covered
