easy chocolate brownie (school holiday version)

Aloha, happy Monday, here with a chocolate brownie recipe today, I can’t believe it’s Monday again, how did that happen, cannot also believe the weather here in Sydney, it’s clocking up to over 30C today here (86F if you speak the other speak), that’s a hot one for Spring I can tell you – so we spent a few hours down the beach at lunchtime…it’s not quite hot enough for me to be in the water yet, but it may not be long.

So I have been making these brownies almost repeatedly over the last month or so…I’m not really a brownie maker, not sure why, always in the past pretty much failed at it I guess. Anyhoo I was looking around for something quick and easy to make recently and came across a recipe on one of those recipe sites where people give it stars and reviews, tried it and it was good. As I was making it I decided to forego the instructions where one had to melt bits in a saucepan and then add them to another mixing bowl – instead of doing this I bunged the whole lot in the saucepan after the butter and sugar melted and gave it a mix with a wooden spoon – high tech baking in this old cottage right?

After it filled this place with Domestic Goddess Scents and I wafted around feeling very pleased with myself I took it out of the oven, made a pot of tea and took it out on the deck, just to you know, test it. It passed the Cup of Afternoon Tea test with flying colours, it also passed the Beach Cottage Boys test – whereby various males walk past cake and brownies and feel the need to pop a piece in their mouth on the way to just about anywhere really (while still having the audacity to walk around with ripped abs and good biceps without having to sweat it out with Jillian Michaels in one’s bedroom).

I made a couple of changes though, reduced the sugar a bit and lost the vanilla…and here we go…you can make this chocolate brownie recipe pretty much quicker than it takes to open a packet of ready-made full of chemicals stuff, well not quite, but really this is dead easy and dead good. From fridge opening to putting in the oven time is 5 minutes, tops. Plus there are only five ingredients and it’s store cupboard friendly.

Easy Chocolate Brownie Recipe

2 cups sugar

250g butter

3/4 cup cocoa powder

4 eggs

1 1/2 cups plain flour

20 x 30 baking tray / slice pan lined with greaseproof baking paper

1. slowly melt butter in saucepan, add sugar and mix.

2. add eggs one by one to the pan and mix.

3. add flour, and cocoa powder and mix to a smooth glossy batter

4. pour in pan and bake 190C 25 to 30 minutes

That’s it from me, I am off to look at a beach house, yup you read that correctly, another one.
