Grape Blueberry Mint Popsicles

For as long as I can remember, one of my favorite summertime snacks has been frozen grapes.

They’re sweet, simple and perfectly refreshing on a hot summer day. I love grabbing a handful on the go or throwing a bunch in a bowl to enjoy after dinner during the warmer months.

About two weeks ago, as I was snacking on a handful of frozen grapes, I started thinking about how grape popsicles often taste nothing like actual grapes. The light sweetness from real grapes is completely lost in deep purple grape flavoring and I decided I would try my best to make a popsicle with real grape flavor. Since I had never made homemade popsicles before, I first had to buy a popsicle mold on Amazon. (I opted for this one and thought it worked really well!) Then it was time to pick out my ingredients!

Over the weekend, I made my first round of popsicles using fresh grapes, frozen blueberries, fresh mint and a splash of light coconut milk. Ryan and I ended up eating the popsicles in one sitting (two each) and I took that as a good sign!

They were so, so good and tasted like a summer treat when, in reality, I knew they were made with simple, wholesome ingredients.

I prepared another batch this morning and made sure to measure everything so I could share the recipe with you guys. I hope you love these popsicles as much as we did in our house!

Grape Blueberry Mint Popsicles

Make four popsicles

Ingredients

  • 1 1/2 cup fresh grapes
  • 1 cup frozen blueberries
  • 7 fresh mint leaves
  • 1/4 cup light coconut milk

Directions

  1. Blend everything together in a high-power blender until very smooth.
  2. Pour into four popsicle molds and freeze for six hours.
  3. To remove the popsicles from the molds, run under warm water to loosen.
  4. Remove from molds and enjoy!
