Hot Cocoa Chex Mix

Today’s Girls On The Run practice is a bit of a celebration. We’ll all be wearing our purple GOTR t-shirts and signing them so we can remember each other and the fun experience we’ve had by decorating our shirts and creating somewhat of a wearable memento!

After dinner last night, I decided to prepare a homemade treat for the girls and since I know for a fact that one of the girls absolutely loves marshmallows and a handful have shared their love for chocolate with me in the past, I wanted to create something that incorporated both marshmallows and chocolate but was also portable and easy to make in large quantities.

Hello, hot cocoa Chex mix!

I added red and green M&Ms, white chocolate chips and hot cocoa powder to the mix to give it a festive holiday flare and really hope the girls love it!

Hot Cocoa Chex Mix

Ingredients

  • 4 cups Rice Chex
  • 2 cups kettle corn
  • 2/3 cup toasted coconut chips
  • 1 cup chopped pecans
  • 1/4 cup butter
  • 1/4 teaspoon vanilla extract
  • 5 tablespoons hot cocoa powder mix
  • 2/3 cup M&Ms
  • 1/2 cup white chocolate chips
  • 2/3 cup marshmallows

Directions

  1. Combine Rice Chex, kettle corn, coconut chips and pecans in a large bowl. Set aside.
  2. Melt butter and add vanilla extract. Pour vanilla butter mixture over Rice Chex mix. Add hot cocoa powder and toss to coat.
  3. Add M&Ms, white chocolate chips and marshmallows to the mix and toss.
  4. Enjoy!

The holiday hot cocoa Chex mix was incredibly easy to make and didn’t require any time in the oven like original Chex mix. I also think it would make a great homemade holiday gift for coworkers. Just pour it into mason jars, tie a ribbon around it and there ya go!
