holiday morning muffins


You know how I feel about breakfast, and that I love my muffin recipes. I’m very loyal to this classic blueberry, for example. But I have to say - dramatic pause - that these are some of the BEST MUFFINS I’ve ever eaten. They taste like spiced carrot cake and are way healthier than most muffin recipes. They would make the greatest, light, holiday morning breakfast, just not if you eat four in a row, like I did today.

Holiday Morning Muffins makes 12 (based on this recipe) 1 1/4 cups flour 1/2 cup brown sugar 1/2 tsp baking soda 1/2 tsp baking powder 1/2 tsp nutmeg pinch ground cloves 1/2 tsp salt 1 cup oats 1/2 cup raisins 1 tablespoon flax seeds (optional) 3 tablespoons olive oil 1 large egg 1/3 cup skim or nut milk 4 medium carrots shredded 1 ripe banana, mashed Preheat the oven to 400 degrees. Coat a 12-cup muffin tin with cooking spray. Whisk the flour, brown sugar, baking soda and powder, nutmeg, cloves, salt, oats, raisins and flax (if using) until combined well. Add in the olive oil, egg, milk, carrots and banana and stir until just blended. Fill cups in muffin tin about halfway with batter. Bake 23-25 minutes or until toothpick inserted in the center comes out clean. Serve warm.
