Jicama Red Cabbage Salad with Mango-Lime Dressing

Well I suppose we have some catching up to do! There’s been a lot going on lately. A lot of exciting things keeping me pretty busy!

1. Our house is officially up for sale. As of today.

We have been looking, but the housing market (buying) is SO insane right now. I will see something I love that went on up on Monday, and they have an agreement of sale by Tuesday afternoon. I hope that our place sells that fast, but at the same time I am nervous about us finding something. My approach to this is that things happen for a reason, and what will be will be. I am trying to not stress about tomorrow,. just focusing on the present moment. One step at a time!

2. I have a new business in the works just about to launch! The landing page for our site is up….fingers crossed this becomes as amazing as we imagine it will. This is something I have been working hard towards for YEARS. I just needed the right people, that have the same drive that bring some other amazing things to the table. We’re not quite ready to share al of the details yet, but very soon! Keep your eyes and ears open because it’s hopefully something that will help YOU!

3. My friend Melissa and I are going to the Omega Institute to attend Baron Baptiste’s immersion workshop this weekend. While I am beyond excited about this experience, I am equally as anxious about being away from Ella. This will be the first time I will EVER be away from her overnight. She will be here with Michael, which actually helps a lot, but I am starting to freak out a little. I’m not afraid to admit that I’m very attached. I will be doing something I love (yoga) all day every day, but I know staying present trying to not miss my Bubba Weez is going to be a challenging task.

4. I posted this scrumptious summer-y Jicama salad on my facebook page last week and wanted to get it up on the blog!

I am in love with jicama right now. It is eaten all by itself most of the time in my house, but I decided to put some of my favorite flavors together in a bowl.

Champagne mangoes are in abundance right now, instead of mango IN my salad, I decided to create a thick, creamy dressing with my mango instead!

It came out great. I used coconut oil, but I would recommend using avocado oil or another mild (healthy!) oil if you do not want it to solidify in the fridge. The dressing would probably be better chilled which you can’t do with coconut oil. This was actually the first time I made salad dressing out of coconut oil, it was interesting and I did enjoy it! I am not quite sure if I trust those “liquid coconut oils” that stay liquid. They are processed differently, and I just don’t know enough about it yet to know if it’s really natural or healthy.

Jicama Red Cabbage Salad with Mango Lime Dressing

ingredients:

  • 1 medium sized jicama, peeled and cut into thin strips (or diced)
  • 1/4-1/2 head of cabbage, shredded
  • 1 avocado, diced
  • a handful of fresh basil leaves (roll the leaves together then chop thin)
    dressing:
  • 1 champagne mango (scoop out all the guts discard the skins and the pit)
  • 2-3 limes, juiced well, I used my manual citrus juicer (toss the rind)
  • 1-2 TBSP apple cider vinegar
  • 1/4 cup plus 1-2 TBSP coconut oil (if serving immediately, if not use olive oil or avocado oil so it doesn’t solidify when you store it–I used coconut oil it was delicious!)
  • salt and pepper, to taste
  • a pinch of cayenne (optional, for an extra kick!)

directions:
Layer the cabbage and jicama in a large bowl. Mix in some basil and carefully add the diced avocado. Mix the dressing ingredients in a blender. Drizzle the dressing on top of the salad (you don’t need much, it’s pretty thick and creamy!). Maybe add an extra squeeze of lime if you desire! Enjoy!!!

In other news on Friday night for the summer SOLstice the yoga studio I work for performed 108 Sun Salutations in the park together. Live music, gorgeous weather, and we ended up with 108 people! Meant to be.

There is a lot of significance behind the tradition of performing 108 sun salutations

108 is a sacred number in a few different religions. Buddhism, Catholicism, Islam and Hinduism to name a few. In astrology there are 12 constellations, and 9 arc segments called namshas or chandrakalas. And 9 times 12 equals 108.

1=We are one

0=We are empty

8=We are everything, infinity

It was really pretty cool how 108 people showed up. That was not planned!

The instructors rotated teaching, I taught 10 of them.

It was a GORGEOUS night. And honestly not as hard as I anticipated. I think a full class would have been more difficult. Once you got into the flow of the workout it went pretty quick and felt pretty good.

Overall, it was pretty awesome.

2. Any tips for me leaving my sweet Weezy for the first time this weekend? My poor friend has to drive 4 1/2 hours with my, I hope I keep it together. I should say do you have tips for HER!?

3. Any tips for BUYING/SELLING right now? Have any of you sold your homes lately?
