Eats of the Day: Summer Kale Salad



Hey Hey! So I decided to venture into the trendy, "So...this is what I ate today" post. As an attempt to play chef, salads are the easiest cooking option in my itty-bitty studio kitchen. I'm obsessed with steamed kale & kale chips, but here is an easy and delicious salad you can throw together. Sachi Inchi nuts are Inca peanuts and an amazing way to boosts your protein and omega 3 intake (buy them here). I have been reading this amazing book called Must Have Been Something Ate by Peggy Kotsopoulos. It's a wonderfully holistic way of connecting how you feel with your diet, how to pair foods, what you are missing and where to get the nutrition you need.
Step 1: Wash and chop up fresh kale Step 2: Dice up some fresh red onion, bell peppers, and feta cheese Step 3: Throw in some dried cranberries, fresh blue berries and inca seeds (substitute sunflower seeds if desired). Step 4: For dressing, splash on some sunflower oil, fresh lemon juice with salt and pepper to taste. Step 5: EAT
