Herb Brined Pork Chops + The Kitchn Cookbook Giveaway!
Thanksgiving is less than three weeks away and already I’ve brined three turkeys to shoot for cooking videos over the past few weeks. Brining makes meat incredibly juicy and moist and there’s no other way I’d rather cook a bird.
While flipping through the amazing new Kitchn cookbook, I came across a recipe for herb brined pork chops and since I was in brining mode, I was excited to try making them for dinner. The pork chops I bought were reasonably lean, so the one hour brining time called for in the recipe really added a lot of flavor and moisture to the chops. Kitchn’s method of cooking first on the stove top and then in the oven was spot on, making for a delectable (and easy) weeknight meal.
I’ve been a longtime fan of the Kitchn website founders and cookbook authors Sarah Kate Gillingham and Faith Durand, so having a collection of their recipes in one book is a total pleasure. The book is truly beautiful, with 150 recipes and 50 essential cooking tips to inspire cooks of all levels (also an awesome holiday gift for your favorite foodie). I’ve had it by my bedside since I got it and have so many things I can’t wait to make from it.
