Paleo Pancakes with Coconut Whipped Cream+ A Poptalk Review



I'm a huge pancake person. I just love breakfast food. If the world was ending and my options were eggs, pancakes, waffles, chocolate chips, and bacon (let's hope if the world ends we are all left with only those options) I would survive. There is something about waking up to the smell of butter (grass-fed butter for me) melting off delectable and fluffy pancakes. These ones don't upset my stomach, are delicious and even tastier than normal Bisquick pancakes, and have a whole bunch of health benefits. Is there anything better? No.
Paleo pancakes (optional *chocolate chip pancakes* or *chocolate chip banana*) as adapted from Against All Grain
Serves 1, original recipe serves 4, but I'm selfish
1.5 eggs 4 tbsp. dairy-free milk (coconut or almond) 1 tablespoon vanilla 1 teaspoon coconut flour 3 tablespoons almond flour 1/4 teaspoon baking soda dash of salt 1/2 ripe banana optional: berries, chocolate chips, walnuts etc coconut oil/grass-fed butter/oil for pan
Instructions: Mix together all wet ingredients. Add dry ingredients into the wet, mixing thoroughly. Let sit for 4 minutes. Your batter will be pretty much liquid, which is okay. If necessary, add 1-2 tablespoons coconut flour extra and mix together. Heat a skillet over medium-high heat, add oil, and pour 1/4 cup of batter onto skillet at a time. If you are using optional ingredients, add them in now on top of batter. Wait about 2 minutes and flip. Serve warm with maple syrup, more butter, vegan hot fudge sauce, nuts etc!
Vegan, paleo coconut whipped cream
1 can whipped cream (tipped upside down and left in the fridge overnight) or purchase coconut cream from Trader Joe's 1 tbsp. vanilla 1 tbsp. cinnamon 2 tbsp. maple syrup, honey, agave, coconut sugar…adjust amount of sweetener depending on how sweet you want it
Blend all ingredients together and refrigerate whatever you don't use. Smear all over pancakes.

I was recently approached by a really rad site/app called Poptalk, which (to put it simply) is the only way you should be communicating via text message. Thought Viber or Whatsapp was the only way to message for free on your Droid or iPhone? Think again, popsters. Once you download the app (which you should go do nowwww on the app store) the first screen allows you to create an account and make your own avatar. The easiest way to start with Poptalk is simply to connect via Facebook. Once you've created a successful account, expect to spend hours on end chatting up with friends in animated language, and now you can finally tell your parents you have an excuse to be on your phone.
