broccoli, egg, and tomato summer salad

The warm temperatures make me crave cold summer salads packed with vegetables. The Polish culture has a ton of variations of summer veggie salads, like this classic Polish potato salad that I shared a while ago.

Today’s recipe I learned from my Ciocia (aunt) in Poland, when she was trying to use up tomatoes from her garden. It’s so simple, hearty, and packs a delicious combination of flavors with very few ingredients.

What you need:

  • 1-2 stalks of broccoli
  • 2 ripe tomatoes
  • 3-4 hard boiled eggs
  • 1T mayonnaise
  • salt & pepper, to taste

What to do:

Step 1: Chop up all the veggies.

Step 2: Mix together with mayo. Season to taste.

And that’s it!

Let the salad sit in the fridge for a while. It allows the juice from the tomato, the cooked egg yolks, and the mayonnaise to mix into a delicious dressing. The broccoli marinates in this and creates a great combination of flavor.
