Thanksgiving is perhaps the vegetarian’s greatest dilemma. What do we eat on a day that practically celebrates meat? It’s not that I miss the taste of turkey, I just want my own Thanksgiving flavors. Not a dish that imitates a traditional meat dish, but fresh foods that celebrate all of the wonderful flavors of fall.
I haven’t done Thanksgiving particularly well in the past as a vegetarian, so this year I was determined to find some delicious choices that everyone could enjoy! Even if you aren’t a vegetarian, you might know someone that is; but I promise there’s no need to be a vegetarian to enjoy these dishes!
