vegetarian thanksgiving

Thanksgiving is perhaps the vegetarian’s greatest dilemma. What do we eat on a day that practically celebrates meat? It’s not that I miss the taste of turkey, I just want my own Thanksgiving flavors. Not a dish that imitates a traditional meat dish, but fresh foods that celebrate all of the wonderful flavors of fall.

I haven’t done Thanksgiving particularly well in the past as a vegetarian, so this year I was determined to find some delicious choices that everyone could enjoy! Even if you aren’t a vegetarian, you might know someone that is; but I promise there’s no need to be a vegetarian to enjoy these dishes!

Check out my post on The Neighborhood for the full recipes! Here’s a peek at the table and what I made…

Wild Rice and Brown Rice Stuffing with Apples, Pecans, and Cranberries

Kale and Olive Oil Mashed Potatoes with Scallions

Green Beans with Leeks and Dill

Enjoy!

P.S. The gorgeous napkins in this post are from LuRu Home, a shop that sells these beautiful textiles using Nankeen indigo hand-dying. I adore the rich color with modern white designs and I mixed a few patterns for the table. Be sure to check out their shop!

P.P.S. I’ll be sharing that easy DIY green centerpiece next week! :)
