Yum, bread and butter pudding with ice-cream. Whilst we've had a glimpse of summer, May seems to be a pretty transitional period for me and a warm pudding with cold ice-cream is near perfect for this time of year!
Bread and Butter Pudding Ingredients
25g butter 8 slices bread 50g sultanas/ mixed fruit 2tsp cinnamon 350ml milk 50ml double cream 2 eggs 25g demerara suga Kelly’s of Cornwall Clotted Cream Ice Cream Method Grease a 2pint/1litre pie dish.
Cut crusts of bread and butter one side.
Cut into triangles and arrange a layer of bread in the dish add a layer of sultanas and sprinkle with sugar and cinnamon. Then repeat the layers until the bread is used up.
Whisk the milk, cream and eggs together and gently pour over the bread. Sprinkle a little sugar on top.
Leave to stand for 30mins.
Place in pre-heated oven at 180C/355F/gas 4 for approx 30 mins or until golden brown.
