I seriously can’t get enough lemon lately and one of my favorite lemon treats are Easy Lemon Bars. I first tried these bars when my brother Danny, who I don’t recall ever cooking or baking, made them for a family get together. I seriously ate like four of them, one after the other, they were that addictive. A perfect blend of sweet and tart, so simple yet so delicious.
When I said these were easy, really, they are easy! I did mention my brother made them before I ever did, right? :) While it’s an incredibly easy recipe, it’s one that I don’t make often because I have zip, zilch, zero willpower when it comes to these bars. None. They are that good.
That’s about all you need right there. Easy peasy, lemon squeezy. Literally, you do actually squeeze a lemon.
These photos are actually from a while ago, somehow they never made it onto the blog. I have replaced my microplane since this photo was taken. The microplane I was using was totally wrong for the job and was a pain to use. I now use an OXO Good Grips Spice Grater, which is probably also totally wrong for the job, but I absolutely love it. Again, it’s made for spices, but this isn’t a Cooking Channel TV show here, it’s much more “what works in my kitchen”. These delicious and easy lemon bars are a perfect spring or summer dessert.

Instructions
Heat oven to 350°F. In small bowl, mix 1 cup Bisquick mix and 2 tablespoons powdered sugar. Cut in butter, using pastry blender (or pulling 2 table knives through mixture in opposite directions), until crumbly. Press in ungreased 8-inch square pan.
2 Bake uncovered about 10 minutes or until light brown. Meanwhile, in small bowl, mix all remaining bar ingredients. Pour coconut mixture over baked layer.
3 Bake about 25 minutes longer or until set and golden brown. Loosen edges from sides of pan while warm.
4 In small bowl, stir lemon glaze ingredients until smooth; spread over bars. Cool completely, about 1 hour. For bars, cut into 4 rows by 4 rows.
