It was a long weekend.
And not in the let’s have an extra day off and have lots of fun weekend kind of long weekend. More like wake up sick Thursday night, end up in the ER Friday, spend all day Saturday asleep and spend Sunday trying to wake up. Still trying to wake up really, but on the mend.
On the let’s find a bright side version of the weekend, Sunday did allow my daughter and I to watch entirely too many episodes of Once Upon A Time, which we started watching a few weeks ago on Netflix (oh my heck, it’s so good – how have I not watched it before now??? My tween and I love it!). It is also good that I was sick this weekend, and not next, as I’ll be in Seattle next weekend – that would not have been good. And the other bright side is that I actually had four recipes made and photographed for the week, something that is entirely unlike me. Heck, that alone should have indicated that I was feverish! So despite a long weekend where I accomplished less than nothing, I still have recipes for this week! Yay!
This cookie is one my mom used to make. Chocolate Chip Treasure Cookies. These delicious cookies are very similar to traditional chocolate chip cookies, except for a few changes that make a big difference. In place of much of the flour, you use graham cracker crumbs. In place of the eggs and some of the butter and sugar, you use sweetened condensed milk, and there is coconut!
These are a really fun twist on your regular chocolate chip cookies. I think it’s nice to have a variety of go to cookie recipes that you can count on, and this is one of mine. Seriously, chewy cookie lovers, you need to try these.
I think my mom originally found this recipe the same place that she found most of her recipes, on the label of a package, most likely a can of Eagle Brand Sweetened Condensed Milk. That is where so many amazing recipes can be found. I even have a cookbook made up of entirely recipes that came off of packages.

HEAT oven to 375ºF. Combine graham cracker crumbs, flour and baking powder in small bowl.
BEAT sweetened condensed milk and butter in large bowl until smooth.
ADD crumb mixture; mix well. Stir in coconut, chocolate chips and walnuts. Drop by rounded tablespoonfuls onto ungreased cookie sheets.
BAKE 8 to 10 minutes or until lightly browned. Cool.
