The Elusive Mugcake

Different trends sweep the blog world all the time. Some are cool, ingenious, and unique….and others can be a bit strange. Some are long lasting and become staples in peoples lives and others are passing fads.

One trend that has been around since the time I started blogging is the making of…..MUGCAKES.

Ahhhh, the elusive mugcake. Seemingly so simple, yet so hard (for me at least) to perfect! And heck, I didn’t even want to perfect it! Just wanted to create one that was edible and lived up to all the hype surrounding them!

Well after years of trying different recipes, experimenting with my own combinations, and nearly giving up on the whole mugcake as a ‘delicious snack’ concept….I’ve finally stumbled upon a mix of ingredients that combine to make a mugcake I actually like!

The texture is not wet and smooshy like some cakes I’ve made have turned out, not too eggy, and has a good flavor too!

I thought I’d share my easy-peasy recipe (two recipes in one week!? I’m on a roll!) with you all incase any of you are mugcake challenged like I’ve been until now!

Coconut Blueberry Mugcake

Ingredients (1 mugcake)

  • 1 egg white
  • 2 tbsp coconut flour
  • 1 tbsp whey protein
  • 1/2 tsp baking powder
  • 1/8 tsp vanilla powder
  • 1/4 cup almond milk
  • 1/4 cup frozen blueberries
  • cinnamon, to taste

Instructions

Mix all ingredients except blueberries togethers. Once evenly combined, fold in blueberries, scrape down the sides of the bowl, and microwave for 4 minutes.

The great part about this simple recipe is that it’s the perfect neutral base to get creative with all sorts of fun add ins and flavor combinations! The coconut flour makes the texture dense and cake like and gives it a subtly sweet flavor that words with whatever you decide to use! The frozen blueberries melt and release their sweet juices all throughout the cake as it’s cooking, but there are plenty of other varieties you could make using the basic ingredients. Here are some other fun mix in ideas (instead of the blueberries):
  • 1 tbsp cocoa powder 1/4 cup chopped frozen cherries
  • 1/2 banana mashed 1 tbsp of peanut flour
  • 1/2 orange chopped up 1 tbsp cocoa powder
  • 1 tbsp carob powder
  • 1 tbsp of your favorite jam 1 tbsp peanut butter
  • 1 tbsp chopped walnuts 1 tbsp raisins
  • 1 scoop of your favorite Amazing Grass powder (Chocolate Peppermint would be delicious!)
  • 1/2 pear chopped up 1 tbsp coconut
  • 1/4 cup chopped pineapple 1 tbsp coconut
