To console myself, as well as brace myself to the reality of having a teenager underfoot, I made myself a couple of these Apple Cider Mojitos…Hey don’t judge, lol. A gal’s gotta do what a gal’s gotta do!

It’s Colleen here today with a super fun seasonal cocktail that will warm you up during those chilly days & nights that are beginning to creep up on us… OR for when you have the need to console yourself! *wink*

Apples are everywhere this time of year, so why not use them in a cocktail?? Since Jo-Lynne’s mojito recipe is so popular, we decided to come up with an autumn version. This Apple Cider Mojito Recipe would be awesome for a harvest party, Thanksgiving gathering, cookie swap or with friends at a bonfire!

The secret ingredient to this deliciously different cocktail is the Cinnamon Simple Syrup…don’t skip that step. Making your own simple syrup is effortless. It takes virtually no time at all, AND you can store it in the fridge to use whenever the need for a cocktail arises. Plus there are no preservatives in it… just sugar & water.

Below, I give you the recipe the way I enjoy it, however feel free to play with it. We all like our drinks different…stronger, sweeter, more or less mint, etc. Make it your own.

Apple Cider Mojito

Ingredients
  • 4 oz apple cider
  • 3 oz Cinnamon Simple Syrup (ingredients & recipe below)
  • 3 oz Applejack (Liard's)
  • 4 oz white rum
  • Diced apples
  • Mint leaves
  • Cinnamon sticks
Cinnamon Simple Syrup
  • ¼ cup sugar
  • ¼ cup plus 1 TBS of water
  • cinnamon stick broken in half

Instructions Prepare Simple Syrup
  1. Place ¼ cup sugar, ¼ cup plus 1 TBS water and half cinnamon stick in a small pot; bring to a boil and then turn off the heat and allow the mixture to sit and cool to room temperature.
  2. Pour into a mason jar and store in the refrigerator until ready to use.
Prepare the Mojitos
  1. Combine cider, cinnamon simple syrup, Applejack and rum in a cocktail shaker or glass measuring cup; shake or stir well.
  2. In two serving glasses, muddle as much or as little mint as you desire. Fill both glasses with ice.
  3. Throw in a small handful of diced apples (I like skin on for color) and then add your cider mixture, splitting it evenly between both glasses, and stir.
  4. Garnish with a cinnamon stick and extra mint leaves.
