One week before Christmas and the countdown begins for a trillion get-togethers in the next few days. Stuck on what to bring to all those holiday gatherings? Here's a homemade chocolate cake that's easy to make and will be sure to leave a lasting impression.

Last weekend, we attended a church Christmas party. It was a potluck and everyone got to choose what they would bring. I usually sign up for dessert but this year I decided to change it up. There was a request for macaroni and cheese, and since I have a bomb recipe for macaroni and cheese from scratch, I said I would bring that dish.

The dinner was well attended and everyone came through with their contributions. My macaroni and cheese was gobbled up in no time. When it came time for dessert, I mozied on over to the dessert table and what to my wondering eyes should appear but 20 store-bought treats. I take that back; there was one homemade dessert. All the rest of the cakes, cookies, and pies came from the local grocery store. Talk about major disappointment. Now I don't want to sound ungrateful, but hey, homemade treats don't have to be all that difficult to make and they taste soooooooooooooooooooo much better than the store bought variety. I understand people are busy, but the party was on a Saturday. Surely those who signed up to bring desserts could have found an hour to bake something, And I wasn't alone. There were several like-minded individuals also casing the area wondering what happened to the homemade goodies.

The holidays demand (and so appreciate) homemade goodies. I'm sure you have one or two gatherings where you might need to bring a treat. and boy, do I have a good one for you to take. The ingredients are few and found in most pantries.
From start to finish, it takes just one an hour to create this yummy chocolate bundt cake. And to add to a holiday theme, drizzle some homemade peppermint frosting on the top. Your friends, families, and guests will be ever so grateful that you took the time to make this homemade dessert. (It makes a great hostess gift too!!)
Triple Threat Chocolate Cake
1 package chocolate cake mix 1 small box chocolate instant pudding 1-12 0z. package chocolate chips 2 eggs 1-3/4 cup milk
1) Grease a bundt pan. (**Note: a bundt pan is a must for any kitchen. If you don't have one, stop by your local Target. They run about $10.00) I've discovered this great product from Trader Joe's: Coconut Oil Spray. Enjoy the benefits of healthy coconut oil as you take care of your pans.

2) Mix all ingredients with a fork.

3) Pour into bundt pan. Bake at 350 for 50-55 minutes. Do not over-bake. Cool completely.
4) Mix 2 cups powdered sugar with enough milk to make frosting. Stir in crushed peppermint candies. Drizzle over cake. Enjoy!!!
